Tōsui (とうすい) is a high–sugar, very late-ripening white-fleshed peach variety. It was selected by Mr. Satoru Ishidō, a seedling grower in Yamagata Prefecture, from open-pollinated seedlings of Kawanakajima Hakutō.

The fruit is large, averaging 300–320 grams, with a slightly rounded shape. When grown without bagging, the skin remains relatively pale; bagged fruit develops a soft light-red blush.

The flesh is white, with red pigmentation near the pit, and has a fine, dense texture with firm flesh. Tōsui is known for its exceptionally high sugar content, reaching up to 23° Brix, with almost no acidity, resulting in an intensely sweet flavor. It is considered a rare specialty variety.

The harvest season is September, classifying it as a very late-season peach.
